GF Whole Grain Flour Mix

A peek inside my GF cabinet.
I would like to start off by saying that this is not my own original idea.  I give credit where credit is due and this recipe is the genius work of Gluten Free Girl & The Chef.  I am posting this recipe here because I use it all the time and it is rather likely that I will reference it over and over again in the future.  That being said, here it is.



Flours  700 g. of...(any combination)

Amaranth   Brown Rice   Buckwheat   Corn   Millet   Oat   Quinoa   Sorghum   Teff   Sweet Brown Rice

Starches  300 g. of...(any combination)

Cornstarch   Potato Starch   Arrowroot   Tapioca   White Rice Flour

Gently mix these together and keep in an airtight container.  I usually mix a double batch, it really stinks not to have any on hand.  My mix is an ever changing thing, what is in it depends on which flours and starches I have on hand.  One can see why a more precise measurement is found in weight and not in volume.  The density of these ingredients varys greatly and a measurement is, really, the only way to go.
